3 Cheese Ravioli Filling

  • 2 large eggs
  • 1 1/4 cup ricotta
  • 1 1/4 cup grated mozzarella
  • 1/2 cup finely grated parmesan cheese
  • 2 tablespoons fresh ‚Äčthyme (or 2 tsp dry)
  • 1/2 teaspoon salt

Combine all ingredients and mix with the paddle of a stand mixer. You can also just mix with a large fork. Refrigerate for at least an hour or up to overnight.
